Roasted Chicken Rice





1 whole chicken

1 tbsp ginger juice (pound the ginger and squeeze the juice)

1 tbsp soy sauce

2 tsp honey

1 tsp salt

1/2 tsp ground white pepper

1/2 tsp five spice powder

1/2 cube chicken stock




Mix together the ginger juice, soy sauce, honey, salt, pepper and five spice powder and chicken stock, then rub this mixture all over the chicken. Marinate for 1hr or so.

Preheat oven to 200degrees. Place the chicken in a roasting pan and roast chicken for 20 mins. Then reduce the heat to 170degrees and roast for 30 – 40 mins until the skin is browned and crisp. Bast chicken with olive oil when roasting.





9 red chillies

2 cloves garlic, peeled

3 inch young ginger, peeled and sliced

1 1/2 tsp fresh lime juice

1 tbsp sugar

1/2 tsp salt

1 cube chicken stock (knor or maggi)

Blend all the above ingredients and cook on low fire and add sliced chilli padi for sikit pedas.

RICE:

4 cups of long grain rice

1 cup of creamer milk ( use thr same size cup as for the rice)

2 tbsp minyak sapi or butter

1 1/2 inch ginger, peeled and sliced

4 cloves garlic, minced

1 large red onion

kayu manis, bunga lawang, bunga cengkih

Salt secukup rasa

SOUP:

Saute 2 garlic in a little oil, add water, black pepper, a few slice of chicken and a cube of chicken stock. Just simple soup.
