Mexican Salsa Sauce


ingredients

4 tbsp olive oil
1 garlic clove, chopped
1/2 cup chopped onion
5 roma (plum) tomatoes, deseeded and diced
2 fresh red chilies
1-2salt,to taste
10ml lemon juice
2/3 cup chopped fresh coriander leaves

methods

1.  Heat oil in a saucepan, add chopped garlic and as soon as the garlic begins to turn brown, add onion.  Saute on high heat, then add tomatoes and chillies.  Cook for 2 minutes.  Take it off the heat, season with salt, lemon juice and coriander leaves.

2.  Allow to cool and serve.
